My Christmas Eve Eve dinner from Hello Fresh: Cheesy Tex-Mex casserole with penne. Now I have no idea what makes this a casserole instead of a baked pasta, but either way, it was DELICIOUS, as expected from any kind of baked pasta (casserole?) with tons of cheese. The corn adds a subtle sweetness and a nice crunch, and works surprisingly well with pasta. It's as if you were making tacos but forgot to get tortillas and decided to make pasta instead, but it turned out to be ridiculously good. That might even be how Hello Fresh developed this recipe. Either way, a happy accident!
