We were exploring Harajuku and deciding where to eat for lunch when we stumbled upon a Japanese-Italian fusion restaurant called Tokyo Tarako Spaghetti that specializes in cod roe spaghetti dishes. There was about a 15-minute wait to get in, but we were intrigued enough to stay in line.
Tarako soybean milk spaghetti carbonara
I decided to get the tarako soybean milk spaghetti carbonara (a rough translation), and it was unexpectedly spectacular. The cod roe adds the most phenomenal umami flavour, and the egg on top makes the carbonara delightfully creamy. Dare I say it might actually be one of the most perfect fusion dishes I've ever come across? (Yes, I dare.)
