Tonight's dinner from Hello Fresh: Mediterranean gnocchi with bocconcini and oregano. In an attempt to be healthier, I decided to choose a vegetarian "pasta salad" for one of my kits this week. And with gnocchi, bocconcini, and feta, I thought it would be amazing. (I substituted cucumbers for spinach because a) my spinach wilted, and b) cucumber adds a nice crunch.) But still, the whole dish just wasn't cohesive. The gnocchi is warm, pan-fried, and buttery, and the salad is cold and briny — great as separate entities but took away the best parts of each other once they were tossed together. I would totally make it again, but with the gnocchi as one dish and the salad as its own separate dish. As they should be.
