Tonight's dinner kit from Hello Fresh: Sicilian-style steak and herbed wedge fries with lemon aioli. I know this has been my general consensus with my home-cooked meals recently, but this was SO. DAMN. GOOD. Okay, so it's just steak and fries, but who knew lemon would be so fucking good with steak? (Maybe the Sicilians, actually. I still don't know why this is called Sicilian-style, but they clearly know what's up.) Also, I am super proud of myself for making such a good medium-rare steak. Every time I have ever cooked a steak, it's always ended up being well-done because I was so scared of undercooking it, but I'm really glad Ying's husband convinced me to get a meat thermometer, because it's been a game-changer.
Speaking of which, so has my air fryer (a.k.a. my baby love), which I have talked about ad nauseam. But it really has produced the most perfectly crispy-on-the-outside, soft-on-the-inside, beautifully golden fries. The lemon aioli was really just the cherry on top. It paired so well with the steak and the fries, that I'm thinking I might just make it my go-to condiment. On that note, I think my cooking skills are improving exponentially. Like, if I were a Sim, I would be at a solid Level 7 by now.
