
Normally, Ying and I meet up on Saturday nights to eat McDonald's but since she broke her ankle and is bedridden and her husband is also feeling sick today, we agreed to take a rain check for next week. Thus, I decided to make my next Hello Fresh kit for tonight's dinner: Cal Smart gravy smothered meatballs with chive mashed potatoes. This whole meal was actually really delicious (I made these mashed potatoes before, and they are definitely a favourite), but it wasn't until I finished cooking everything that I realized why it was "cal smart" — each portion is about 2/3 of what I normally eat in a meal. I ended up eating all the green beans and an extra meatball in tonight's serving, so tomorrow's portion is going to be pretty lacking, but I guess I'll just eat it for lunch instead. (Actually, it might be a blessing in disguise because tomorrow is Viv's wedding reception and I won't be home for dinner, anyway.)
