Instead of Chelsea coming down here every time to hang out, I drove up north to visit her this evening. (She works from home now, so I don't feel as hesitant to see her. Like when she worked at the hospital for a week. I refused to see her for a month after she quit.) We took a long walk around her neighbourhood with her dog (the most exercise I've gotten in like, half a year) and then went back to her house for dinner.

Of course, dinner wouldn't be complete without dessert, so we decided on ice cream sandwiches made with warm s'mores cookies and vanilla bean ice cream. 🤤🤤🤤

She and her boyfriend made us Chicken Polese — from a recipe handed down from his grandfather — which consists of chicken breasts simmered in butter, garlic, tomatoes, onions, and green peppers topped with melted mozzarella on top. It was paired with rice pilaf, roasted broccoli, and slices of French baguette, and was just *chef's kiss*.
