My dad invited me over to his apartment for Winter Solstice dinner this evening. On the menu? HOT POT!

He literally spent three hours buying and preparing everything as well as buying a new hot pot cooker just for tonight. Made a dipping sauce (mine included soy sauce, sesame paste, chili oil, and chili sauce) and had a feast of sliced lamb, sliced beef, an assortment of fish balls, daikon, Chinese cabbage, choy sum, fried tofu, and enoki mushrooms. Obviously, I ate until I was about to explode. (I can't let my dad's efforts go to waste, after all. And believe it or not, this was only a third of the food he bought for this dinner. He and my little sister are gonna be eating really well for the next week.) Oddly enough, this was my first time actually having hot pot at home instead of a restaurant, and IT IS SO FUCKING GOOD. I just don't know why it took 34 years for us to actually do this.

My dad went all out for this dinner and even made a delicious cinnamon cheesecake for dessert. (You'd think he'd make a Chinese dessert, but we are Canadian, after all.) He's been into making cheesecake since the one he made for my birthday turned out so well. In fact, he got so into it that he also made me a separate cheesecake to bring home. (Bless him for having so much free time during this pandemic.) So now I have dessert to last me until the new year!
