Mexican-spiced pork quesadillas with tomato pepper salsa and lime crema
Taco Tuesday! Except I made
quesadillas. But no one says Quesadilla Tuesday, even though it's basically the same components but fried in a pan. Whatever. These ones were made with Mexican-spiced pork and served with tomato pepper salsa and lime crema, and they were freaking delicious. I didn't realize how easy it was to make quesadillas, as my only experience with them has been at Taco Bell. But I will definitely make these again. Even if it's not Taco Tuesday. (Mexican Tuesday? Meat-in-tortillas Tuesdays? I don't know, who even started dedicating Tuesdays to tacos?)
