Ying and her husband invited me over to their house for Christmas dinner this evening and we had a FEAST.

The theme tonight was comfort food. Since none of us really like turkey, Ying doesn't like ham, chicken is boring, and roast beef would take too long to prepare, Ying's husband made ribs. Three full racks of ribs. Delicious, fall-off-the-bone, barbecue sauce-slathered ribs. And to go with it, he also made a huge pan of what they call "mac pie" — essentially mac and cheese with tons and tons and tons of cheddar and gouda that is baked until the top is crispy and bubbly — because you can never go wrong with carbs and a plethora of cheese. Ying made creamy, buttery mashed potatoes, and a leafy salad with homemade honey dressing (because we needed some sort of vegetable to make it seem a little healthier).
My contribution to tonight's dinner was the desserts. I wanted to choose two different ones so we had some variety, but because I don't bake, we decided to get the blueberry white chocolate cheesecake and the lemon meringue pie from The Village Grocer (that we had to order a week ahead of time because they are insanely busy this time of year). Needless to say, dinner was amazing. And they packed me enough leftovers for another two dinners.
