Crispy barramundi with creamy zucchini and tomato orzo
Tonight's dinner from Hello Fresh:
Crispy barramundi with creamy zucchini and tomato orzo. I usually skip the fish options from Hello Fresh because I'm not a huge fan of home-cooked fish (it never tastes as good as in restaurants), but I thought I'd try something a little different this week. For some reason, Hello Fresh always offers barramundi over any other type of fish, so I decided on this recipe. Barramundi isn't a particularly notable fish, but this dish was really, really good, and it was all owing to the orzo. Creamy, bright, and flavourful; I could easily have eaten two portions of this orzo alone for dinner. That having been said, the fish was good but not great. I've cooked barramundi once before for a
fish taco recipe and it's not bad, but it cooks a little too firm for my liking. The breadcrumb topping is delicious, though, so I think a softer fish with a little more give (and maybe more breadcrumbs to coat the whole fish instead of just the top) would've made this dish perfect.
