Met up with Ronsee for the first time in two months, perhaps the longest we haven't seen each other in the last decade. So obviously, we decided to have sushi for dinner and went to check out Hibiki.

I genuinely can't believe that we haven't tried this sushi place sooner because it has easily replaced my previous favourite sushi place in Markham. It is on the slightly pricier side, but you get what you pay for. Thick (thicc, even), beautiful cuts of the freshest fish with great variety and gorgeous textures. Honestly some of the best, melt-in-your-mouth fatty tuna I've ever had. Even the sushi rice is perfect: sticky, just enough vinegar with a slight sweetness, soft enough to give a satisfying chew but won't break apart when you pick it up. I just can't believe I live five minutes from here and haven't been before. This will absolutely be my new go-to sushi place.
